MONTEOE MILD-AGED CHEESE
Enjoyable as table cheese or grated; its color varies from white to slightly straw yellow as it ages; compact or tiny holes with a full and strong taste that becomes piquant as it ages. A Pecorino Cheese that derives its name from the reed or wicker baskets (canestri) that were once (and still are) used to shape the cheeses and impart design.
